At Macelleria Agricola Toscana Patrone, farming follows strict principles of ethics and sustainability, going well beyond the regulations of the Cinta Senese DOP specification.


According to the consortium rules, a certified pig must graze outdoors for at least 12 months, with a maximum density of 10 animals per hectare. We have chosen to exceed these standards, guaranteeing a minimum growth period of 24 months.


This means a natural and unforced growth process, with a positive impact both on the animal's welfare and the quality of the meat.

Natural Diet and Nutritional Quality


Our pigs live freely, feeding mainly on alfalfa, roots, tubers, and acorns, while cereals represent only a small supplement. This natural diet helps produce fat rich in omega-3, the so-called "good fat" (HDL cholesterol), recommended for those with cholesterol issues. Moreover, the slow growth allows the meat to develop a deep colour and a superior organoleptic profile, characterised by a high content of oleic acid.

Respect for the Environment and Animal Health

Our farm has a natural water source, used to hydrate the pigs without the use of chemical treatments. Furthermore, thanks to a diet rich in natural antioxidants, our animals do not require antibiotics, ensuring meat free from pharmaceutical residues and healthier for the consumer.

Beyond Organic: The Commitment of Patrone

The meats processed by our Agricultural Butchery go beyond organic certifications. We have created a CLEAN LABEL project, completely excluding: Antibiotics, Nitrites, Nitrates, Gluten, Lactose in every phase of the production process.

Artisanal Processing and Tuscan Tradition

Our production follows traditional methods, preserving authentic Tuscan butchery techniques:

  • Artisanal processing: each half carcass is manually sectioned.
  • Knife-chopped sausage, hand-stuffed.
  • Lard in Tuscan Salami inserted using traditional techniques.
  • Tying of cured meats done by hand by expert butchers.
  • Historic Tuscan recipes, preserving the authentic flavours of rural tradition.
